If fresh pineapple makes your tongue tingle, that is bromelain at work. Bromelain is a group of protein-digesting enzymes found in the pineapple plant (Ananas comosus), and it is also why fresh pineapple is used to tenderise meat.
Stem or fruit?
Bromelain is present in the fruit, but commercial bromelain is extracted mainly from the stem, a by-product of pineapple processing.
What does GDU mean?
Enzymes are measured by activity. Bromelain is usually labelled in GDU (gelatin digesting units) per gram or per serving, which tells you more than the weight alone.
Why is it paired with quercetin?
Bromelain is commonly combined with quercetin in one capsule. Check the label for the amount of each.
What to check before you buy
- The amount of each ingredient per serving, not just per capsule
- How many capsules make one serving and how many servings are in the pack
- Whether any ingredient sits inside an undisclosed "proprietary blend"
