Black elderberry comes from Sambucus nigra, the European elder, a small tree that grows in hedgerows and woodland edges across Europe. Its dark purple berries have long been cooked into syrups, jams and cordials.
Why elderberries are always processed
Raw elderberries, as well as the leaves, stems and seeds, contain natural compounds that can upset the stomach. That is why the berries are traditionally cooked, and why supplements use processed berry extracts rather than raw fruit.
How labels list it
Elderberry supplements usually state the amount of berry extract per serving, sometimes with an extract ratio or a standardised percentage of anthocyanins, the purple pigments in the fruit.

- How many capsules make one serving and how many servings are in the pack
- Whether any ingredient sits inside an undisclosed "proprietary blend"
